Prepare the sponge by mixing 70g all-purpose flour, 30g whole flour, 3g instant yeast, and 100g room temperature water in a bowl.
Let the sponge sit for a while to activate the yeast.
In another bowl, mix 100g milk, 36g unsalted butter, and 24g honey until smooth.
Add the sponge to the mixture and stir to combine.
In a separate bowl, combine 140g all-purpose flour, 60g whole flour, 12g cocoa, 24g sugar, and 6g salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Transfer the dough to a greased loaf pan and sprinkle cornmeal on top.
Bake at 350°F for 25 minutes or until a toothpick inserted comes out clean.
