This dish showcases a balance of spices and sweet elements, reflecting the region's trade history. Today, Moroccan tagine is enjoyed worldwide, with variations featuring different proteins and vegetables, making it a versatile favorite.

Start with no heat and place the chicken in the tagine.
Add 1 chopped onion (red, white, or shallots) and some olive oil.
Add crushed garlic to the pot.
Add preserved lemon or half a fresh lemon if preserved is unavailable.
In another pot, add a little water and a drizzle of olive oil to cook the carrots halfway.
Add the carrots to the pot with salt and pepper, mix well, cover, and cook for 3-5 minutes until softened.
Transfer the softened carrots over the chicken in the tagine.
After a few minutes on low heat, the chicken will turn a little white.
Add spices: salt, pepper, coriander powder, ginger, and turmeric, mixing well to coat the chicken.
Add some chopped parsley and coriander, and a few drops of hot water to help cook.
Cover the tagine and let it cook for a while.
After a few minutes, add the carrots on top and drizzle the sauce over them.
Cover and let it cook until all the water evaporates.
Add the lemons before serving.
