Paprika powder 1 tsp

Himalayan pink salt 1 tsp or to taste
Onion powder 1 tsp
Black pepper crushed ½ tsp

Cumin seeds roasted & crushed 1 tsp
Coriander seeds roasted & crushed 1 tsp
Ginger garlic paste 1 tbs
Lemon juice 1 & ½ tbs
Olive oil 2 tbs
Chicken pieces (preferably thigh & legs) 800g
Cooking oil 2 tbs
Pickled lemon 1
Onion sliced 1 large
Garlic chopped 3-4 cloves
Tomato pureed 1 medium
Fresh parsley chopped 1-2 tbs
Saffron strands ¼ tsp (soaked in 2 tbs of hot water)
Chicken stock ½ Cup
Green olives 12-15

In a bowl, add dried oregano, paprika powder, cinnamon powder, pink salt, onion powder, black pepper crushed, turmeric powder, cumin seeds, coriander seeds, ginger garlic paste, lemon juice, olive oil & mix well.

Add chicken & mix well, cover & marinate for 2 hours.

In a wok, add cooking oil, marinated chicken & fry on high flame from both sides for 4-5 minutes.

Add onion, garlic, pickled lemon (chopped), tomato pureed, fresh parsley, dissolved saffron, chicken stock, cover & cook on low flame for 25-30 minutes.

Add green olives, cover & cook on low flame for 1-2 minutes.

Sprinkle fresh parsley & serve with pita bread.
