Moroccan Chicken Tagine

coriander or parsley - 2 tbsp chopped
garlic grated - 1 tsp
preserved lemon pulp - 1 tsp
olive oil - 2 tbsp
paprika or chili powder - 2 tsp
pepper powder - 1 tsp
ginger powder - 1 tsp
cumin powder - 1 tsp
salt - to taste
saffron water - few strands soaked in hot water
carrot - 2 (cut into big wedges)
turnip - 1 (cut into big wedges)
potato - 1 (cut into big wedges)
courgette - 1 (cut into big wedges)
onion - 1 small (sliced)

In a large bowl, add the chopped coriander, preserved lemon pulp, garlic, ginger powder, paprika powder, pepper powder, cumin powder, salt, saffron water, and olive oil.

Place the chicken in the marinade and mix well. Cover and refrigerate for at least 30 mins or overnight.

Cut the vegetables into big wedges and slice the onion.

Heat the tagine pot and add olive oil.

Add the sliced onions to the tagine pot and place the chicken pieces on top of the onions. Cook for two minutes.

Turn the chicken pieces and cook for another two minutes.

Layer the turnip, carrot, courgette, and potato wedges on top of each other in the tagine pot.

Mix some water with the leftover marinade and pour it over the vegetables. Sprinkle some salt.

Cover the tagine pot and place it on top of a heat diffuser. Cook for 1 hour 15 minutes on low flame, checking in between until the vegetables and chicken are cooked well.
