Heat olive oil in a tagine or large pot.

Add chicken pieces and let them simmer for around 10 minutes.

Check on the chicken after 20 minutes and turn it over to cook on the other side.

Prepare the fries by soaking potatoes in water for 10 minutes and drying them thoroughly.

Add olives, chopped sliced onions, coriander, parsley, and half of the preserved lemon to the chicken.

Cover and leave to cook for another 15 minutes until the onions are reduced and cooked.

Remove the chicken from the pot to brown it, if desired.

Add sultanas to the pot and let them soak up the gravy for about 5 minutes.
