Today, Moroccan Chicken Tagine is celebrated globally, often adapted with various proteins and vegetables to suit local tastes.

Prepare the carrots by peeling and cutting them in half lengthways.
Cut the zucchini in half lengthways.
Peel the potatoes and cut them into eight wedges each.
Cut the bell pepper into thick strips.
Cut the onion into wedges and place all the prepared vegetables in a large bowl.
Add Harissa paste, pressed garlic, 2 tablespoons of oil, and a generous pinch of salt and ground pepper to the bowl and mix with hands to combine.
Heat 1 tablespoon of oil in a tagine pot over medium heat.
Add bite-sized pieces of chicken and cook, stirring frequently, until no longer pink.
Add ginger, turmeric powder, and saffron, stirring to combine with the spices.
Reduce heat to low and arrange the vegetables in a conical shape on top of the chicken.
Sprinkle with olives and pour in 1 cup of water.
Cover and cook over low heat for 35 to 45 minutes until chicken is fully cooked and vegetables are tender.
