Collard greens are nutritious and can be used similarly, while green cabbage is often cheaper.
Briefly heat the savoy cabbage leaves in boiling salted water and rinse with cold water to make them malleable.
Soak an old bread roll in water.
Cut two onions into small pieces.
Add the sliced onions to the 1 kilogram of ground beef.
Add 2 eggs to the mixture.
Add spices to taste: 1 teaspoon salt, ground pepper, grated nutmeg, 0.5 teaspoon ground cumin, and 1 teaspoon marjoram.
Squeeze out the soaked bun well, tear it into small pieces, and add it to the minced meat filling.
Mix everything well to get a homogeneous mass.
Place a previously blanched savoy cabbage leaf on the work surface.
Place a slice of bacon in the upper middle part of the leaf so that it protrudes and can envelop the savoy cabbage leaf when rolling.
Place the minced meat filling in the middle of the leaf and start rolling.
Fold in the sides of the leaf slightly when rolling to seal the roulades well.
Place the roulades in a baking pan.
Add water to the baking pan so that the roulades are half submerged.
Put the savoy cabbage rolls in the oven at 160 degrees Celsius for about 60 minutes.
Sprinkle cheese over the savoy cabbage rolls and put them in the oven briefly until the cheese has melted.
Remove the roulades from the oven and place them on a rack.
Put the water and juice from the roulades in a separate pot and mix with a hand blender.
Add 3 tablespoons of creme fraiche, salt, and pepper to taste to the sauce.
Thicken the sauce if necessary.
Serve the roulades with boiled potatoes as a side dish.
