Semi-sweet chocolate is easier to find and less expensive than dark chocolate.
Combine water, milk, butter, a little salt, and a little sugar in a saucepan.
Bring the mixture to a simmer on the stove.
Add 1 cup of flour and stir until it becomes a doughlike consistency.
Transfer the dough to a mixer and add 4 beaten eggs; mix until combined.
Prepare a baking sheet by brushing it with a little water to create a nonstick surface.
Pipe the dough onto the parchment paper using piping tip Ateco 809.
Smooth down the peaks with a moistened finger.
Brush the eclairs with a little egg wash before baking.
Poke a hole in each eclair with a toothpick to fit the piping tip for filling.
Fill the eclairs with homemade peanut butter mousse and top with chocolate ganache.
