Curry Chicken Jamaican Style

1-2 pounds chicken leg and thigh (skin off)

Cut 2 stalks of scallion and place them in a bowl.

Add 1 tablespoon of scotch bonnet pepper to the bowl.

Finely chop 4 cloves of garlic and add to the bowl.

Add 0.5 teaspoon of fresh ginger to the bowl.

Cut 1 carrot and 1 potato, and add them to the bowl.

Chop 1 onion and add it to the bowl.

Add 1 teaspoon of pimento seed to the bowl.

Add 1 teaspoon of all-purpose seasoning to the bowl.

Add 1 teaspoon of chicken seasoning to the bowl.

Add 2 tablespoons of curry powder (Better Pack) to the bowl.

Wash 1-2 pounds of chicken leg and thigh (skin off) in lemon juice and cut into smaller pieces.

In a bowl, season the chicken with olive oil, garlic, scallion, scotch bonnet pepper, remaining ginger, and curry powder.

Add a pinch of salt and massage the seasoning into the chicken.

Let the chicken marinate for at least 1 hour or overnight if possible.

Heat a pot on medium heat and add just over 1 tablespoon of olive oil.

Add 1 tablespoon of curry powder to the pot and let it burn for 20 seconds.

Add some garlic to the pot.

Add the seasoned chicken to the pot and stir.

Leave the chicken uncovered for at least 1 minute, then cover and cook for 5 minutes.

Check the chicken after 5 minutes and flip it over.

Leave the chicken for another minute.

In the same bowl used to season the chicken, add 1.5 cups of water and mix it to get excess seasoning.

Add the water mixture to the pot with the chicken.

Add 0.5 teaspoon of salt and remaining black pepper and all-purpose seasoning to taste.

Increase the heat slightly and let it cook for at least 15 minutes.

After 15 minutes, add the carrot and potato to the pot.

Add remaining scallion, thyme, garlic, and one whole scotch bonnet pepper (not burst).

Leave to cook for at least 10 minutes.

Remove the lid and turn off the stove once the chicken is cooked and potatoes are tender but not mushy.
