Sheet Pan Chicken

2 chicken breasts, bone-in, skin on
salt

golden beets

blood orange
fresh tarragon

Cut the bones out of the chicken breasts with a knife.

Season the chicken breasts with salt and pepper.

Heat a skillet and add a touch of butter.

Sauté the chicken breasts in the skillet until browned on both sides, but not cooked through.

Transfer the browned chicken breasts to a sheet pan.

Add golden beets and red beets to the sheet pan.

Add a blood orange to the sheet pan (or a regular orange if blood oranges are unavailable).

Add fresh tarragon to the sheet pan (or chives, parsley, or basil if preferred).

Drizzle olive oil over the chicken and vegetables on the sheet pan.

Bake in a 350°F oven for about 25 to 30 minutes, or until the chicken is done.
