Clean the chicken by removing the skin and cutting off excess fat with kitchen scissors.

Expose the bone of the chicken to ensure it cooks thoroughly.

Season the chicken on both sides with ten spice seasoning and marinate in the fridge for 30 minutes to 1 hour.

After marinating for about 2 hours, prepare the other ingredients: chop bell peppers, cut potato and carrot into chunks, slice onion, and chop olives.

Heat 2-3 tablespoons of annatto oil in a large pot and add 1 tablespoon of sugar to caramelize.

Once the sugar has caramelized, add the marinated chicken to the pot and brown it on one side before turning it over.

Remove the chicken from the pot and set it aside once browned.

Add sofrito, garlic cilantro paste, olives, and onions to the pot and sauté for a few minutes.

Add the can of tomato sauce to the sautéed vegetables and let it cook briefly.

Return the chicken to the pot and mix it with the vegetables and sauce.

Add salt and pepper to taste, and cover the pot to cook for about 20 minutes, checking the liquid released by the chicken.

After 10 minutes, check the liquid and adjust if necessary, then add the potatoes.

Add chopped cilantro and the whole chili pepper if desired, then cover and continue cooking.

After about 45 minutes, check the dish; it should be ready with plenty of gravy.
