Heat 1 tablespoon of olive oil in a skillet over medium-low heat.
Add 1 medium diced onion and cook for 5 minutes until softened.
Stir in 3 cloves of minced garlic and cook for 1 minute until fragrant.
Add 1 pound of lean ground beef, crumbling the meat while cooking, and cook for about 10-12 minutes or until the meat is cooked through.
Add 1 tablespoon of smoked paprika, 1 teaspoon of chili powder, 2 teaspoons of ground cumin, 1 tablespoon of thyme, 1 teaspoon of salt, and freshly ground black pepper to taste; stir to combine.
Add ⅓ cup of tomato paste and stir to combine; set aside the beef mixture.
Take a 10-inch flour tortilla and add grated cheese (like mozzarella or cheddar) over half of the tortilla.
Top the cheese with a portion of the ground beef mixture and add more cheese on top.
Fold the tortilla in half and heat about 1 tablespoon of oil in the skillet over medium-low heat.
Cook the quesadillas for about 2 minutes on each side until golden brown and the cheese is melted.
