1

Slice 3 pounds of sweet onions into thick slices, about 1/4 inch thick, and break up the rings.

2

In a bowl, combine 1 teaspoon black pepper, 1 teaspoon garlic salt, 1 teaspoon paprika, and 1 teaspoon thyme to create a spice mix.

3

Place the sliced onions in a greased 9x13 inch baking dish, packing them in tightly.

4

Sprinkle the spice mix over the onions evenly.

5

Cut 1/2 cup of cold butter into small pats and distribute them over the top of the onions.

6

Add 2 1/2 cups of cheese: 1 cup medium cheddar, 1 cup shredded mozzarella, and 1/2 cup grated Parmesan, spreading it evenly over the onions.

7

Cover the baking dish with aluminum foil (sprayed with cooking spray if not non-stick).

8

Bake in a preheated oven at 350°F for about 40 minutes.

9

After 40 minutes, increase the oven temperature to 425°F, remove the foil, and bake for an additional 30 minutes.

10

In the last 15 minutes of baking, add an extra handful of cheddar cheese on top.

11

Bake until the onions are soft and the edges are crispy and golden brown.
