Remove the membrane from the bottom of the ribs using a paper towel to grip it and pull it off.

Cut the ribs in half to create two pieces.

Mix the rub by combining 1 cup brown sugar, 1 teaspoon garlic powder, 2 teaspoons paprika, 1 tablespoon dry mustard, 1 teaspoon dry thyme, 1 teaspoon celery salt, 1 teaspoon onion salt, and 1 teaspoon kosher salt in a bowl.

Apply the rub generously to the top and bottom of the ribs, ensuring all surface areas are covered.

Place the steam rack in the Instant Pot and add 2 cups of apple juice to the bottom.

Stand the ribs upright in the Instant Pot on the steam rack.

Seal the Instant Pot lid and set the vent to the sealed position.

Set the Instant Pot to 'meat/stew' and cook for 20 minutes, then let it sit on low for an additional 5 minutes after cooking.

While the ribs are steaming, prepare the barbecue sauce by mixing 1 cup Duck Sauce and 1/2 cup of your favorite barbecue sauce in a bowl. Optionally, add 2 tablespoons of tiger sauce for extra flavor.

After the ribs have finished steaming, remove them from the Instant Pot and re-season with some reserved rub.

Preheat the grill and place the ribs on the grill with the top side down for 5 minutes to caramelize.

Flip the ribs and grill for another 5 minutes with the lid open to continue caramelization.

After the second 5 minutes, apply the barbecue sauce mixture to the tops of the ribs and let it caramelize on the grill.
