Honey is a natural sweetener, while brown sugar can be less expensive.
In a bowl, add softened butter and castor sugar.
Whisk the butter and sugar together until smooth and creamy.
Once the mixture is pale and fluffy, add plain flour, ground rice, and a pinch of salt.
Sift the flour and ground rice into the mixture.
Use a spatula or your hands to bring the mixture together to form a dough.
Gently squeeze and pull from the bottom to combine until there is no loose flour.
Turn the mixture into a lightly buttered shallow 20 cm cake tin.
Using the back of a spoon, smooth the mixture into the tin and press down firmly.
Smooth over the top surface of the mixture.
Pinch the edges of the shortbread for a traditional look.
With a small sharp knife, score the mixture into about eight pieces without cutting all the way through.
Use a skewer to create holes in a concentric circle pattern on top of the shortbread.
Sprinkle a little castor sugar on top.
Bake in the oven for about 45 to 50 minutes until pale golden.
Turn out the shortbread and leave it to cool completely before cutting into pieces.
