Clean the chicken leg quarters by cutting between the thigh and leg, discarding extra skin and fat.
Rinse the chicken in water and mix with 1 cup of apple cider vinegar.
Boil a pot filled with 1/3 of water on medium-high heat and add the chicken; boil for 20 minutes uncovered.
Peel the potatoes and cut them into four pieces each; set aside.
After 25 minutes of boiling the chicken, drain the water and add the potatoes to the pot.
Season the chicken with 1 teaspoon of salt, 1 tablespoon of oregano, 1/2 teaspoon of cumin, 1 tablespoon of onion powder, 1 tablespoon of garlic powder, and 1/4 teaspoon of turmeric.
Add 1/3 cup of sliced green olives, 1 heaping tablespoon of capers, 2 tablespoons of sofrito, and 2 tablespoons of tomato paste to the pot.
Stir everything together and let it cook for another 30 minutes on medium-high heat, stirring occasionally.
Add about 1 cup of baby carrots and 1/2 teaspoon of fresh peppercorn; let it boil for an additional 20-30 minutes until thickened.
