Baba au Rhum

300g flour (bread flour with 12% protein)
1/4 tsp salt
5g dried yeast
40g sugar
2 tsp vanilla extract
4 eggs
60g melted butter
150ml warm milk
400ml whipping cream
100g sour cream
80g powdered sugar
1 tsp vanilla extract
1L water
400g sugar (divided in 1/2)
3 tbsp rhum essence or 40ml Rhum

Combine warm milk and dried yeast in a bowl and let it sit until frothy.

In a mixing bowl, whisk together flour, salt, and sugar.

Add the yeast mixture, melted butter, and eggs to the dry ingredients. Mix until smooth.

Cover the bowl and let it rise in a warm place until doubled in size.

Grease the molds and pour the dough into them.

Bake until golden brown and a toothpick comes out clean.

Prepare the syrup by combining water, sugar, and rhum essence in a saucepan. Bring to a boil and simmer.

Let the cakes cool slightly before inverting them onto a serving plate and pouring the syrup over.
