Preheat the oven to 160°C (fan forced).

Whisk the egg whites in a bowl until frothy (not stiff).

Add 1.5 cups of caster sugar to the frothy egg whites and mix until well combined.

Stir in 4 cups of shredded coconut until thoroughly mixed.

Wet your hands and roll the mixture into small balls, ensuring they are all the same size for even cooking.

Place the balls on a baking tray lined with parchment paper.

Press half a glassy cherry onto the top of each macaroon.

Bake in the oven for 12-15 minutes or until they start to brown.
