Butternut Squash Pasta

1 medium butternut squash, peeled and cubed
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
8 oz pasta (your choice)
1/2 cup pasta water
1 teaspoon chili flakes
2 tablespoons tomato paste
2 anchovies, chopped
1/4 cup hard salty cheese (optional, like pecorino or parmesan)
1/4 cup soft creamy cheese (optional, like ricotta or mozzarella)
2 tablespoons cherry vinegar (or apple cider vinegar, white wine vinegar)

Toast garlic in olive oil and butter until golden brown, then set aside.

Add butternut squash to the skillet and cook until soft, stirring occasionally.
