1

Crumble full fat feta into a bowl.

2

Add 3 eggs to the crumbled feta.

3

Add 2 heaping tablespoons of Greek style yogurt.

4

Add 1 teaspoon of baking soda.

5

Add 0.5 cup of olive oil.

6

Mix all ingredients together until fully combined and set aside in the fridge.

7

Measure out 400 grams of plain flour and add 1.5 tablespoons of salt and 1 tablespoon of vinegar.

8

Add a drizzle of olive oil and 1.33 cups of water to the flour mixture.

9

Mix everything together until the dough forms and the edges of the bowl are clean.

10

If the dough is too thin and sticky, add an extra tablespoon of flour.

11

Flour the bench and shape the dough into a log.

12

Cut the log into 8 pieces, making each piece into a ball.

13

Cover the balls with cling wrap or a clean tea towel and let them rest for 30 minutes.

14

Oil the baking tray after 30 minutes of resting.

15

Flour the bench generously and roll out each piece of dough into thin sheets, about the size of the baking tray (30 cm x 43 cm).

16

Pick up the rolled-out dough and dust off the extra flour.

17

Layer one sheet of pastry onto the baking tray.

18

Add a layer of the cheese mixture on top of the pastry sheet.

19

Add a layer of shredded spinach on top of the cheese mixture.

20

Repeat layering until all pastry sheets and ingredients are used up.

21

Stretch the pastry to the corners of the tray for even shaping.

22

Brush leftover cheese mixture on the last layer of pastry.

23

Dot 10 grams of chopped butter across the top for flavor and texture.

24

Sprinkle black and white sesame seeds on top.

25

Place the borek into a preheated oven at 180 degrees fan force for 45 minutes or until puffed and golden.

26

Serve fresh from the oven or reheat in an oven or sandwich press for best results.
