Making your own seasoning can reduce costs and control sodium.
Set pressure cooker to sauté high and preheat.
Add 1 pound of ground beef to the pressure cooker and brown it.
Drain off the excess grease from the browned ground beef.
Add 14.5 ounces of diced tomatoes (juice and all) to the pot.
Fill the diced tomato can halfway with water (approximately 7 ounces) and add that to the pot.
Add 0.5 teaspoon of oregano and 1 teaspoon of garlic (pre-diced in a jar) to the pot.
Add 1.25 ounces of taco seasoning mix to the mixture.
Add 2 bags (18 ounces each) of frozen cheese tortellini to the pot.
Put the lid on the pressure cooker and set it to pressure cook for 3 minutes.
After 3 minutes, perform a quick release of the pressure.
Once the pressure is released, add fiesta blend cheese to the pot and stir it in.
Serve the taco tortellini on a plate, garnishing with green onion and optional sour cream.
