2 large flour tortillas
1 cup cooked rice
1 cup black beans, drained and rinsed
1 cup shredded cheese (cheddar or Monterey Jack)
1/2 cup salsa
1/2 cup sour cream
1 avocado, sliced
1/4 cup chopped cilantro
1 tsp cumin
1 tsp chili powder
1/2 tsp salt

Warm the flour tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.

In a bowl, mix the cooked rice, black beans, cumin, chili powder, and salt until well combined.

Lay one tortilla flat on a clean surface and spoon half of the rice and bean mixture onto the center.

Top the mixture with half of the shredded cheese, salsa, sour cream, avocado slices, and cilantro.

Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to enclose the filling.

Repeat the process with the second tortilla and remaining ingredients.

If desired, grill the burritos in a skillet for 2-3 minutes on each side until golden brown and the cheese is melted.

Slice the burritos in half and serve with additional salsa and sour cream on the side.
