Remove skin from 6 chicken pieces and score them lightly for even cooking.

In a large container, add chicken, 1 teaspoon of salt, and 1/4 teaspoon of ground pepper. Combine and let rest.

Chop 20 g of garlic and grate a piece of ginger to get 1 teaspoon.

In a bowl, mix 200 g of peanut butter with 15 cl of boiling water.

Prepare 70 g of tomato paste with 4 tablespoons of vegetable oil in a pan and heat over high heat.

When the oil is hot, add the chicken pieces and grill for 3 minutes, then flip and grill for another 3 minutes. Remove chicken and leave the oil in the pan.

Add chopped onions to the pan and sauté over high heat for 5 minutes until soft.

Add chopped garlic and grated ginger, stirring for 2 minutes.

On one side of the pan, add tomato paste and 1 tablespoon of vegetable oil, stirring for 2 minutes.

Add the vegetables (carrots, potatoes, mini peppers), canned tomatoes, lemon juice, and peanut butter mixture. Mix all together.

Add 1 teaspoon of salt and 1/2 teaspoon of ground pepper, mixing again.

Return chicken pieces to the pan and mix with the sauce.

Cover and let simmer over low heat for 30 minutes, stirring every 5 minutes to prevent burning.

After 30 minutes, add cilantro, stir briefly, and turn off heat.
