1

Peel the carrot.

2

Remove the strings from the celery.

3

Cut both into 5-6 mm cubes.

4

Slice the onion into about 2 mm thick slices.

5

Place vegetable scraps (carrot peels, celery strings, onion peels) in a tea bag.

6

Add the diced vegetables and the tea bag with scraps into a pot with 1200 ml of water and heat.

7

Once boiling, cover and reduce to low heat to simmer for a while.

8

In a frying pan, melt the butter and sauté the onions over medium heat.

9

Keep the heat at medium. If it looks like it's going to burn, add a little water.

10

Sauté for about 15 minutes until caramelized.

11

Combine with the soup and simmer on low heat for 30 minutes.

12

After 30 minutes, season with salt and pepper (recommended to keep it light as cheese will be added).

13

Place toasted French bread in an oven-safe dish and pour in the soup generously.

14

Heat in a fish grill or toaster oven for 5 minutes to warm the dish.

15

Top with shredded cheese and bake for an additional 2-3 minutes, watching closely for browning.

16

Once nicely browned, garnish with dried parsley and serve.
