Cevapi, originating from the Balkans, particularly Bosnia and Herzegovina, is a beloved dish made of minced meat, often enjoyed at gatherings and celebrations. Traditionally served with flatbread and ajvar, it reflects the region's rich culinary heritage and communal dining culture. Today, cevapi has gained popularity beyond its borders, with variations found in many countries, showcasing its universal appeal.

Prepare 500 grams of ground beef, preferably with some fat.
Add 10 grams of salt and 2 grams of black pepper to the meat mixture.
Mix well to create a compact mixture.
Add 50 ml of carbonated water to enhance flavor and texture.
Cover the mixture with plastic wrap and refrigerate overnight or for at least 3 hours.
After refrigeration, add a pinch of baking soda and a few drops of lemon juice to the mixture.
Mix again, adding a couple of tablespoons of carbonated water if needed to achieve the desired consistency.
Form the mixture into approximately 20 balls, each weighing about 25-30 grams.
Use a piece of freezer bag to shape the ćevapi, pressing and rolling them to the desired length.
Heat oil in a pan and fry the ćevapi, turning them frequently for even cooking.
After about 4-5 minutes, remove the ćevapi from the pan and place them on a paper towel to absorb excess oil.
