Start by preparing the dry rub in a bowl, adding 1 tablespoon each of all-purpose seasoning, onion powder, meat seasoning, and Jamaican jerk seasoning, then mix well.
Set the dry rub aside and prepare the wet marinade.
Add 4 cups of water to the blender.
Chop the onion into small pieces and add it to the blender.
Chop the garlic and add it to the blender.
Chop the thyme and add it to the blender.
Chop the scallions (green onions) and add them to the blender.
Chop the ginger and add it to the blender.
Add 2 tablespoons of pimento grains to the blender.
Add 1 tablespoon of browning sauce to the blender for color.
Blend the mixture on low until well combined and check the consistency.
Prepare the scotch bonnet peppers by cutting them in half and removing the seeds.
Place the cut peppers into a jar with 1 cup of vinegar and shake to combine.
Clean and wash the chicken thoroughly.
Pour the dry rub seasoning over the chicken and massage it into the meat, ensuring it gets into all corners.
Pour the blended marinade over the chicken, ensuring it is well coated.
Let the chicken marinate for 24 hours in the refrigerator.
Preheat the oven to 350 degrees Fahrenheit.
Prepare a baking tray that can also grill the chicken.
Wrap the baking tray with tin foil and place the chicken pieces on it, ensuring they are spaced out for even cooking.
Place the tray on the top shelf of the oven and cook.
