Layer cheese and sliced sausage on top of the bread.

Cook until the bread is golden brown, about 3-4 minutes.

Flip the sandwiches carefully and cook until the cheese melts, about 3-4 minutes.

Remove from skillet and let cool slightly.

Spread mustard on the unbuttered side of the bread.

Top with pickles and sliced onion.

Season with black pepper to taste.

Cut sandwiches in half and serve warm.
