Karpatka, a traditional Polish dessert, originates from the Tatra Mountains, resembling the peaks of the Carpathian Mountains. Today, it remains a beloved treat in Poland and has found fans worldwide, often adapted with various fillings and toppings.

1 cup water
1½ cups flour
5 eggs
1 tsp baking powder
1 x vanilla pudding package (~ 3½ oz)
⅓ cup sugar
3 cups milk
1¾ sticks butter, softened
⅓ cup jam (strawberry or raspberry)

Preheat the oven to 400°F.

In a pot, combine 1 cup of water and 1 stick of butter. Bring to a boil.

Once boiling, remove from heat and stir in 1½ cups of flour and 1 tsp of baking powder until combined.

Add 5 eggs one at a time, mixing well after each addition until the batter is smooth.

Spread the batter evenly in a baking dish and bake for 20–25 minutes until golden brown.

While the cake is baking, prepare the frosting by mixing 1 x vanilla pudding package with 3 cups of milk and ⅓ cup of sugar. Whisk until thickened.

In a separate bowl, beat 1¾ sticks of softened butter until creamy, then combine with the pudding mixture until smooth.

Once the cake has cooled, spread the frosting on top and add ⅓ cup of your favorite jam.

Dust with powdered sugar before serving.
