Cut 4 medium potatoes into fries, leaving the skin on for added fiber.
Soak the fries in a bowl of cold to room temperature water for 30 minutes to remove excess starch.
Drain the fries and pat them dry with a clean kitchen towel.
Transfer the fries into a mixing bowl and toss them with avocado oil or olive oil.
Season the fries with about 1 tablespoon each of onion powder and garlic powder.
Lay the fries on a baking sheet coated with cooking spray in a single layer.
Preheat the oven to 425°F.
Bake the fries for 25 minutes, then flip them and bake for another 10 minutes until golden brown and crispy.
While the fries are baking, prepare the aioli by dicing 3 garlic cloves and placing them into a mixing container.
Add 1 tablespoon of Dijon mustard, 1 tablespoon of white wine vinegar, 1 teaspoon of tarragon, and 1 egg to the container.
Pour in 1 cup of the same oil used for the fries and blend until smooth and creamy.
Season the aioli with salt and black pepper to taste.
Once the fries are done, transfer them to a bowl and toss with garlic, parsley, rosemary, and Parmesan cheese.
