Cut the russet potatoes into strips about 1 cm (1/2 inch) thick, leaving the skin on for extra crispiness and fiber.
Soak the potato strips in cold water for about 10 minutes to help remove excess starch and improve crispiness.
In a small bowl, mix 3 tablespoons of vegan mayonnaise with 1 teaspoon of Sriracha hot sauce (or 1 tablespoon depending on taste preference) to make the Sriracha mayo sauce.
Drain the soaked potatoes and dry them using a clean kitchen cloth until all the water has been removed.
In a large bowl, toss the dried potato strips with 1 tablespoon of olive oil, 1 teaspoon of garlic powder, 1/4 teaspoon of salt, 1/4 teaspoon of ground black pepper, and 1/8 teaspoon of chili flakes until evenly coated.
Transfer the seasoned potato strips to a baking tray, ensuring enough space between them for even cooking.
Bake the fries in the oven at 390°F (200°C) for 40 to 45 minutes, flipping them halfway through the baking time until they turn golden and crispy.
While the fries are baking, slice green onions into thin coins and chop parsley into small pieces.
Once the fries are done, sprinkle them with an extra dash of salt, and serve with fresh parsley, sliced green onions, toasted white sesame seeds, and a drizzle of the Sriracha mayo sauce.
