4 large russet potatoes
2 tablespoons oil
1 teaspoon sea salt
1/2 teaspoon ground pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder

Cut a tiny part of the potato so it stands on its own without rolling away.

Slice the potato into 1/4-inch slabs.

Stack the slabs and cut them into 1/4-inch sticks.

Soak the cut fries in cold water for at least 30 minutes.

Make seasoned salt by stirring together 1 teaspoon of sea salt with 1/2 teaspoon each of ground pepper, smoked paprika, garlic powder, and onion powder.

Dry the soaked fries well using a salad spinner or a clean dishtowel.

Rinse and dry the bowl used to soak the fries, then add the dried fries back to it along with 3 tablespoons of oil and 1 ½ teaspoons of seasoned salt.

Toss the fries well to coat them in oil and seasoning.

Spread the fries onto a baking sheet.

Bake in a 375°F oven without moving them for 20 minutes.

Increase the oven temperature to 425°F and bake until golden and crisp, another 15 to 25 minutes, stirring once for even browning.
