Originating from France, almond croissants are a delightful pastry that combines the buttery layers of croissant dough with a sweet almond filling. Traditionally enjoyed at breakfast or as a snack, these pastries are often found in bakeries across France. Today, almond croissants have gained popularity worldwide, with many variations incorporating chocolate or fruit.
Heat water in the microwave until hot enough to dissolve sugar.
Add sugar to the hot water and mix until dissolved.
Add almond extract to the sugar syrup and set aside.
In a bowl, combine almond flour, powdered sugar, corn starch, and salt.
Add 2 eggs, vanilla extract, almond extract, and butter to the mixture.
Use a stand mixer to whip the filling until fluffy and combined.
Prepare croissants that have been left out overnight until hard.
Pour sugar syrup into a shallow dish.
Dip both sides of each croissant into the sugar syrup, ensuring they are not overly soaked.
Spread a couple tablespoons of the filling inside each croissant like a sandwich.
Top the filled croissant with a little almond cream (frangipane).
Dunk the top of the croissant into sliced almonds.
Place the prepared croissants on a baking tray and put them in the oven.
Once baked, let the croissants cool.
Sift powdered sugar over the top of the cooled croissants.
Transfer the pastries to a wooden tray lined with parchment paper.
