120 g cake flour
30 g ground almonds
1 tsp baking powder
1/4 tsp salt
2 tbsp milk at room temperature
1 tbsp yogurt at room temperature
60 g colourful sprinkles
115 g icing sugar
1 tsp zest of lemon
Juice of 1/2 lemon

Heat the oven to 160°C.

Line a cupcake tin with muffin liners.

In a mixing bowl, combine together the cake flour, baking powder and salt.

Sift the dry ingredients together twice and set aside.

In another mixing bowl, beat the unsalted butter until smooth.

Beat in sugar little by little until all the sugar is gone.

Continue beating the ingredients for 6 minutes on medium speed.

Beat in eggs one at a time and beat each egg for 30 seconds at high speed.

Beat in 1/2 of the flour, milk, yogurt, 1/2 of the remaining flour mixture and the ground almonds at low speed. Do not over mix.

Divide the batter into the muffin liners.

Bake the cake in the preheated oven for 20 minutes on 160°C.

Let the cakes cool completely.

For the lemon icing, mix together the icing sugar, zest of lemon and juice of lemon.
