3 1/2 lbs Pork Shoulder Butt
3/4 medium onion (large pieces)
7-9 Large garlic cloves
1 tsp dried thyme
1 tsp black pepper
1 tsp ground cumin
1 Tbsp Mexican Oregano (or regular oregano)
3 Bay leaves
1 Tbsp Salt
3/4 C. Hot water
Zest and juice of 1 orange
Zest and juice of 1 lime (dump half squeezed in pot only)
3/4 C. Cola
3/4 C. Whole milk
1 lb. Lard (2 cups)
Corn or flour tortillas
Your favorite salsa
Guacamole
Chopped onions

Cut the pork shoulder into large chunks.

Season the pork with salt, black pepper, ground cumin, and Mexican oregano.

In a large pot, heat lard over medium heat.

Sear the pork chunks until browned on all sides.

Add chopped onion, garlic, zest and juice of orange, zest and juice of lime (dump half squeezed in pot only), hot water, cola, and bay leaves to the pot.

Cover and simmer on low heat for several hours until the pork is tender.

Remove the pork and shred it with two forks.

Spread the shredded pork on a baking sheet and broil until crispy.

Serve with corn or flour tortillas, salsa, guacamole, and chopped onions.
