Pork Carnitas

Cultural Context

Carnitas, meaning 'little meats' in Spanish, is a traditional Mexican dish made by braising or simmering pork in its own fat until tender. It is often used as a filling for tacos, burritos, or served with rice and beans. The dish has roots in the state of Michoacán, where it is celebrated for its rich flavors and crispy texture. Carnitas are a staple in Mexican cuisine, enjoyed during festive occasions and family gatherings.

1

In a blender, add water, onion, garlic, salt, marjoram, thyme, pepper, cumin, and 4 whole cloves with the stems removed and blend until smooth.

2

Set the blended mixture aside.

3

In the Instant Pot, add a little vegetable oil and heat it up.

4

Add the pork in a single layer, avoiding overcrowding to ensure browning instead of steaming.

5

Season each batch of pork with a little salt and pepper for flavor.

6

Once all the pork is browned, bring it back to the pot.

7

Add the onion mixture, a couple bay leaves, orange juice, and a couple tablespoons of sweetened condensed milk to the pot.

8

Seal the lid on the Instant Pot and cook on high pressure for about one hour.

9

After one hour, allow for a 20 minute natural release before opening the lid.

10

Move all the pork pieces into a big bowl and shred with two forks.

11

Spoon some of the cooking liquid over the shredded pork to keep it moist.
