Cut the ends off the green plantain and score it in half.
Remove the skin of the plantain using your thumb or a spoon.
Slice the plantain into thin slices resembling plantain chips.
Slice the queso into thin slices or cubes, depending on preference.
Heat vegetable oil in a frying pan until hot.
Fry the plantain slices until they start to turn golden, flipping them as needed.
Remove the fried plantains and place them on a paper towel-lined plate to drain excess oil.
Salt the fried plantains immediately after removing them from the oil.
Fry the cheese for about 2 minutes until golden on both sides.
Assemble by piling the plantain chips and placing the fried cheese on top.
