Start by warming 1 cup of whole milk until lukewarm.
Add 1/4 cup of granulated sugar and 2 1/4 teaspoons of active dried yeast to the milk and mix well.
Let the yeast mixture sit for about 8 minutes until it becomes pillowy and foamy, indicating the yeast is active.
In a separate bowl, combine 3 cups of all-purpose flour and 1/4 teaspoon of salt, then whisk together and set aside.
Melt 4 tablespoons of unsalted butter in the microwave, covered to prevent splatter.
Add 1-2 teaspoons of pure vanilla extract to the melted butter and mix.
Beat 2 eggs in a bowl and add them to the butter and vanilla mixture, then combine.
Once the yeast is active, add the flour mixture to the yeast mixture and mix using a tabletop mixer on low speed for about 8 minutes, until the dough is sticky and not forming a ball.
Transfer the sticky dough to a greased bowl (with olive oil) and cover with plastic wrap, letting it rise in a warm place for about 1.5 hours until doubled in volume.
Prepare a piping bag fitted with a star attachment and fill it halfway with Nutella or your preferred chocolate hazelnut spread.
In a bowl, mix 1 cup of sugar with 2 teaspoons of ground cinnamon for coating after frying the donuts.
Dust a work surface with flour and roll out the dough to about 1/2 inch thick, then cut into rounds using a 1.5-inch cookie cutter.
Place the cut donuts on parchment-lined baking trays, cutting as close together as possible to minimize scraps.
Let the donuts sit covered with a clean kitchen towel for about 20-30 minutes to puff up.
Heat olive oil in a pot over medium heat until it reaches 350°F, using a thermometer to check the temperature.
Fry the donuts in batches until golden brown, then transfer to a cooling rack to avoid sogginess.
Once cooled, dip the donuts in the cinnamon sugar mixture for coating.
