Cut one fresh orange and squeeze out the juice into a bowl.
Add 3 tbsp black raisin, 3 tbsp golden raisin, 3 tbsp tutti frutti, 2 tbsp almond, 2 tbsp cashew nuts, 3 tbsp pistachio, 3 tbsp red cherry, and 3 tbsp apricot to the bowl.
Mix well and keep aside for 30 minutes to soak the fruits.
In a blender, add four to five peppercorns, four cloves, one small cinnamon stick, three cardamom pods, 1 teaspoon sugar, half teaspoon ginger powder, and half teaspoon nutmeg, and blend until smooth.
Prepare the caramel sauce by adding half cup sugar and 1 tbsp water to a pan and cooking until the sugar is caramelized.
Carefully add half cup water to the caramelized sugar and boil for 2 minutes, then let it cool completely.
In a bowl, take 1/4 cup milk and 1/4 cup oil and mix well.
Add 1 cup flour, 1 tbsp milk powder, 1 teaspoon baking powder, and 1/4 teaspoon baking soda to the bowl and mix everything together.
Add the blended spice mix and mix gently.
Pour in the cooled caramel sauce and fold the batter gently to keep it light.
Add 1 teaspoon vanilla essence and 1 teaspoon orange zest to the batter.
Add the soaked fruits to the batter and mix well.
Grease a 6-inch mold with oil and place baking paper inside.
Pour the batter into the mold and add dry fruits on top.
Place a pan with a wire stand and preheat for 5 to 7 minutes on medium low heat.
Cook the cake for 30 to 35 minutes on medium low heat.
Cool completely before slicing.
