Banoffee Muffins
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Preheat your oven to 190 degrees Celsius.
Break your toffee into pieces and coat them in flour, then set aside.
In a bowl, combine sugar, oil, milk, and eggs, and stir together.
Add in your mashed bananas and mix well.
Optionally, add a few drops of banana flavoring and mix it all together.
Add in your flour and bicarbonate of soda mixture, stirring until almost combined.
Add in your coated toffee and mix everything together.
Divide the mixture between muffin trays and bake for 20 to 25 minutes.
Test with a toothpick to see if they're ready.
Let them cool completely on a cooling rack or serve warm.
