1

Slice the flank or skirt steak down the middle and locate the direction of the grain.

2

Rotate the meat and slice it across the grain for tenderness.

3

In the Instant Pot, add olive oil, white vinegar, lime juice, brown sugar, chili powder, ground cumin, garlic powder, oregano, paprika, red pepper flakes, salt, black pepper, and beef broth. Mix this up really well.

4

Add the sliced beef and red onions to the pot.

5

Let this set at room temperature to marinate uncovered for 30 minutes.

6

Replace the lid on the Instant Pot, ensuring the switch is set to the seal position.

7

Press pressure cook, set to high pressure, and adjust the cook time to 6 minutes, then press start.

8

After the cook time is up, let the pot naturally release its pressure for 15 minutes, then do a quick release by moving the switch to the vent position.

9

Wait for the pin to drop before removing the lid and give it a stir.

10

Warm your tortillas on the stove over medium-high heat.

11

Fill your tortillas with the meat and top off with fresh homemade pico de gallo.

12

Serve it up and enjoy.
