Kasav Ayisien, or cassava bread, is a traditional Haitian staple made from cassava, a root vegetable widely cultivated in the Caribbean. This dish holds cultural significance as it represents the resilience and resourcefulness of Haitian cuisine, often enjoyed during meals or as a snack. Today, variations exist across the Caribbean, but the essence of kasav remains a cherished part of Haitian identity.

Honey adds sweetness with a different flavor profile.
Scrape the skin off the yuca instead of peeling it.
Grate the yuca using a sharp grater.
Squeeze out the juice from the grated yuca using a kitchen cloth, ensuring it is dry.
Let the yuca sit to form a white part from the water, known as black coral or lamb.
Grate the coconut and set it aside.
Remove the white part from the water and let it dry to form a powdery texture.
Crumble the dry yuca with clean hands until it resembles a flour texture.
Add a little bit of salt to the crumbled yuca and mix it in.
Add a little bit of sugar to the mixture, which is optional but recommended for this recipe.
Use a Dutch pan to cook the mixture, forming it into a circle about 1/2 inch thick.
Add grated coconut and a little sugar on top of the yuca mixture before cooking.
Cover with a towel to keep the steam in while cooking.
