Chop one onion and set aside.
Open a half can of tomato sauce for the recipe.
Prepare a quick version of mayo ketchup by mixing 2 tablespoons of mayonnaise, 1 tablespoon of ketchup, and 2 cloves of minced garlic in a bowl.
Add 1/2 teaspoon of hot sauce to the mayo ketchup mixture, adjusting to taste for spiciness.
Squeeze a squirt of lime juice into the mayo ketchup mixture.
Sprinkle black pepper into the mayo ketchup mixture and mix well.
In a skillet, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onions until translucent.
Add 1 tablespoon of sofrito to the sautéed onions and mix well.
Add the half can of tomato sauce to the skillet with the onions and sofrito.
If the mixture is too dry, add a little water to keep it moist.
Sprinkle in a pinch of oregano and black pepper to taste, then let the mixture simmer for 2-3 minutes.
Boil the hot dogs in water until heated through.
Assemble the hot dogs by placing the chopped meat mixture on top of the hot dog in the bun.
Top the hot dog with sautéed onions and the mayo ketchup mixture.
Add potato sticks on top of the assembled hot dog for crunch.
Serve immediately.
