Peel the potatoes, removing the skin.
Chop off both ends of the potatoes to ensure uniformity.
Cut the potatoes into about 2-inch rounds.
Soak the potatoes in a bowl of cold water for about 20 minutes to remove excess starch.
Drain the potatoes and dry them off.
Season the potatoes with salt and freshly ground black pepper on all sides.
Heat a pan over medium-high heat and add 2 tablespoons of oil.
Transfer the potatoes to the pan and cook them on one side for about 3-4 minutes until golden brown.
Flip the potatoes and cook for an additional 1-2 minutes.
Pour in 1/2 cup of chicken stock, add 3 sprigs of thyme, and smash 2 cloves of garlic and add them to the pan.
Top the potatoes with 3 tablespoons of diced butter.
Preheat the oven to 400°F (200°C).
Transfer the pan to the oven and bake for about 30 minutes until the potatoes are tender.
