Preheat the oven to 200°C (400°F).

Peel the maris piper potatoes and cut them into two-inch thick cylinders.

Slice off the ends of the potatoes to create a flat surface on each end.

Heat 2 tablespoons of vegetable oil in an ovenproof frying pan on high heat until hot.

Carefully place the potatoes in the pan flat side down and cook for 5-6 minutes until golden brown, moving them around to prevent sticking.

Turn the potatoes over, reduce the heat to medium-high, and cook for a further 5-6 minutes until golden brown.

Add 3 tablespoons of unsalted butter, 2 cloves of garlic (peeled and sliced in half), and 2 sprigs of fresh thyme to the pan and let the butter melt.

Stir the garlic and thyme with the butter to infuse the flavors, then baste the potatoes with the melted butter.

Remove the garlic from the pan to prevent burning, and pour in 240 ml (1 cup) of strong hot chicken stock around the potatoes.

Sprinkle the tops of the potatoes with about a quarter teaspoon of salt and black pepper each.

Place the pan in the oven and roast for 30 minutes.

After 30 minutes, check the potatoes for tenderness by inserting a sharp knife in the middle. If it doesn't slide in easily, return them to the oven for another 10-15 minutes.

Once tender, serve topped with sprigs of fresh thyme.
