Preheat the oven to 400°F (200°C).
Peel and cut the potatoes into thick cylinders.
Heat olive oil in a large oven-safe skillet over medium heat until shimmering.
Add the potatoes and sear until golden brown on one side, about 5-7 minutes.
Flip the potatoes and add butter, garlic, and thyme to the skillet.
Baste the potatoes with the melted butter for 2-3 minutes.
Pour vegetable stock into the skillet until it reaches halfway up the potatoes.
Season with salt and black pepper to taste.
Transfer the skillet to the preheated oven.
Roast the potatoes for 25-30 minutes, or until tender and the stock has reduced.
Remove from the oven and let rest for a few minutes before serving.
