Make a couple of holes on 2 eggplants to ensure that they are not going to explode while cooking.

Put the eggplants on stove directly to the fire, flipping them to cook every side evenly.

After cooking, place them in a bowl and cover to make them sweat, which helps remove the skin easily.

Once rested, slice the eggplants from top to bottom and scrape the inside with a spoon.
