Pork Loin
Slice the pork loin into medium-thick pieces, ending up with nine even slices.
Cover the first three slices with plastic wrap and tenderize them.
Flip the slices over and tenderize the other side.
Mix salt, dried herbs, black pepper, smoked paprika, garlic powder, and nutmeg in a bowl.
Season each slice of pork with the spice mix, rubbing it in to help the meat absorb the flavors.
Cover the seasoned pork and place it in the fridge to marinate.
Slice one onion and add it to a skillet, sautéing until golden brown.
Slice mushrooms thicker since they will shrink while cooking, then add them to the skillet with the onion, seasoning with salt and black pepper.
Grate one carrot coarsely and add it to the skillet with the mushrooms and onion.
Grate some cheese and finely grate garlic, then add both to the skillet mixture and stir well to combine.
Lay the marinated pork on a board, add the filling to the seasoned side, and spread it evenly.
Roll the pork tightly and evenly, tucking in any loose ends.
Beat three eggs until smooth in one bowl, place flour in another bowl, and breadcrumbs in a third bowl.
Coat each rolled pork piece in flour, ensuring complete coverage.
Dip the floured roll in the beaten egg to help the breadcrumbs stick.
Coat the roll in breadcrumbs, making sure each side is fully covered and patching any missed spots.
Heat oil in a pan (not as much as for deep-frying) and gently place the rolls in once the oil is hot.
Cook the rolls for 5-7 minutes on medium heat, turning them slowly to brown each side evenly.
