Award-Winning Pork Loin | BBQ Recipe
Recipe Information
Pork Loin
Trim the pork loin by removing any loose pieces and excess fat, especially around the edges.
Cut off the rib meat if preparing for competition, but leave it on for home cooking.
Remove the silver skin and any gristle from the back side of the pork loin.
Use kitchen shears to tidy up any rough edges on the pork loin.
Prepare a large pan by spraying it with cooking spray and placing two sticks of salted butter at the bottom.
Cut the pork loin in half if it's too long for the pan, placing the two pieces flat on top of the butter.
Apply a heavy coat of smok and Magic pork rub on the sides and top of the pork loin, avoiding the bottom.
Add a light coat of smok and Magic rib rub on top of the pork loin.
Pack 4 cups of brown sugar all around each piece of pork loin, ensuring it's well coated.
Place the pork loin in a warmer spot to let the brown sugar sweat and melt for about an hour.
Spritz the pork loin with water or apple cider vinegar to speed up the sweating process if desired.
Preheat the smoker to 275°F and place the pork loins inside for about 40 to 45 minutes to let them smoke.
