1 kg potatoes
2 medium onions
2 tablespoons olive oil
200g bacon
1/2 cup white wine

2/3 cup cream

Peel the potatoes and place them in water with salt.

Boil the potatoes for 15-20 minutes until soft, then remove from water and allow to cool slightly.

Slice the onions and sauté them in olive oil for 5-6 minutes.

Chop the bacon and cook it for 4-5 minutes.

Add white wine to the bacon and cook for 2 minutes over low heat, then turn off the heat.

Slice the boiled potatoes and rub the bottom of a baking dish with a clove of garlic.

Spread half of the sliced potatoes on the bottom of the baking dish, adding salt and black pepper to taste.

Add the onion and bacon mixture on top of the potatoes.

Add the rest of the sliced potatoes on top, seasoning with salt and black pepper to taste.

Pour 2/3 cup of cream over the layers.

Cut the Reblochon cheese in half crosswise, then cut each half into quarters and arrange the cheese quarters on top of the dish.
