Cut 1.75 pounds of Yukon Gold potatoes into quarter inch half moons.

Steam the potatoes in a steamer basket for about 15 to 17 minutes until a paring knife meets a little resistance.

Remove the potatoes and let them cool for about 10 minutes.

Cook 6 slices of thick cut bacon cut into half inch pieces in a skillet over medium heat until chewy crispy, about 5 minutes.
